Carbs are everywhere!

Even the best diet can be

The problem with carbs
Carbohydrates are not evil in and of themselves. The problem with carbs is what happens to them after they are digested. With the help of the enzyme amylase, all carbs are broken down into simple sugars. Eating too many carbohydrates can thus increase the amount of sugars in your blood.
Sugars then stimulate the pancreas to release insulin to bring blood sugar levels back down to normal levels. Ideally, insulin helps transport those sugars into your cells, where they can be used for energy.
But when we eat too many carbs too often, insulin levels keep spiking and the cells eventually reduce their number of insulin receptors or their sensitivity to insulin to keep from getting overloaded.
